Jerk Cauli ‘Nuggets’ with Protein Loaded Bean Stew

Packed with Vitamin C and containing nearly zero grams of fat, sodium, or sugar, cauliflower is the hero ingredient in this delicious vegan recipe. Cauliflower ‘nuggets’ are coated with mustard, jerk seasoning, and Panko breadcrumbs and baked in the oven until golden and crispy. Served with a smokey black bean and spinach stew and finished off with a sprinkling of fresh coriander, it’s a great dish to enjoy for a wholesome mid-week dinner.

Grilled Coley with Fennel Remoulade and Bulgur Salad

Coley is a great tasting white fish with a similar meaty texture to cod, making it a versatile ingredient to use in fresh recipes like this one. Its flaky texture works brilliantly with the crunchy fennel remoulade, which is packed with fiber, Vitamin C and potassium, and the nutty bulgur wheat and kale mix. In order to obtain the nutrients from dark leafy kale, and to save time washing up, it’s steamed in the same pan as the bulgur wheat and fluffed it up with salt and pepper for a delicious side.

Protein-Packed Turkey Stir Fry with Carrots & Peppers
